Apple and Banana Bread

This weeks recipe is a delicious and easy to make treat, Apple and Banana Bread!

This sweet treat is suitable for those who can’t eat:

  • Gluten
  • Dairy
  • Soy
  • Nuts
  • Corn and Potato (Note: Corn and potato are commonly used in commercial gluten free flour mixes, so I use a home made mix, see Flour for more information!)

What You’ll Need:

  • 1 Cup Measuring Cup
  • Large Mixing Bowl
  • Spoon/Fork for mixing
  • Loaf Pan, lined with baking paper
  • Wire Cooling Rack

Ingredients:

  • 3 Cups Self Raising Flour
  • 3 Over Ripe Bananas, mashed
  • 2 Eggs, lightly beaten
  • 420g Apple Puree

Method:

  1. Add the flour, bananas, eggs and apple to the mixing bowl and mix well to combine.
  2. Pour into the loaf pan.
  3. Bake for about 60 minutes at 180°C, until a skewer inserted into the centre comes out clean.
  4. Cool in the loaf pan for 5 minutes, then transfer to a wire rack to finish cooling.
  5. Slice and serve toasted with a little butter.

So easy, and a perfect morning or afternoon snack!
