This weeks recipe is a delicious and easy to make treat, Apple and Banana Bread!
This sweet treat is suitable for those who can’t eat:
- Gluten
- Dairy
- Soy
- Nuts
- Corn and Potato (Note: Corn and potato are commonly used in commercial gluten free flour mixes, so I use a home made mix, see Flour for more information!)
What You’ll Need:
- 1 Cup Measuring Cup
- Large Mixing Bowl
- Spoon/Fork for mixing
- Loaf Pan, lined with baking paper
- Wire Cooling Rack
Ingredients:
- 3 Cups Self Raising Flour
- 3 Over Ripe Bananas, mashed
- 2 Eggs, lightly beaten
- 420g Apple Puree
Method:
- Add the flour, bananas, eggs and apple to the mixing bowl and mix well to combine.
- Pour into the loaf pan.
- Bake for about 60 minutes at 180°C, until a skewer inserted into the centre comes out clean.
- Cool in the loaf pan for 5 minutes, then transfer to a wire rack to finish cooling.
- Slice and serve toasted with a little butter.
So easy, and a perfect morning or afternoon snack!
